Cucumbers are great for healthy skin–from both inside and out. While it may be recommended to add cucumbers to your diet to improve the complexion and health of the skin, cucumbers are also used topically to reduce swelling under the eyes and the effects of sunburn. And for an extra boost of vitamin A, C and potassium, add cucumbers to your favorite summer salads and sandwiches. If you choose organic cucumbers, leave the skin on for extra nutrition–all you have to do is slice and serve!
5-Minute Cold Cucumber Salad
Stay cool with this easy-to-prepare summer salad. One serving provides 246% of your Daily Value (DV) for vitamin C and 52% DV for vitamin A.
Prep and Cook Time: 5 minutes
Ingredients:
1/2 medium red onion, sliced thin
1 medium clove garlic, chopped
1 medium cucumber, Cucumber, peeled, seeds scooped out and sliced
1 medium tomato, cubed
1 medium red bell pepper, diced, Diced Bell Pepper
1 TBS feta cheese
6 kalamata olives, cut into halves or quarters
2 TBS fresh lemon juice
Sea salt and pepper to taste
Optional: fresh or dried dill
Directions:
Chop garlic and slice onions and let sit for 5 minutes to bring out their health-promoting properties.
Combine all ingredients and serve.
