Carrots also contain a newly discovered phytonutrient, called falcarinol, which is highly protective against colon cancer. And remember, enjoying whole fresh carrots will provide you not only with the benefits of these phytonutrients, but the entire complex of nutrients whole, fresh unprocessed carrots deliver, including vitamin K, C, folate, potassium, B6 and dietary fiber.
Try this recipe for a great tasting way to enjoy carrots.
Carrots with Honey Mustard Sauce
Prep and Cook Time: 5 minutes
1 lb carrots, 1/4″ slices
1 tsp Dijon mustard
2 tsp honey
2 TBS extra virgin olive oil
Fill the bottom of the steamer with 2 inches of water.
While steam is building up in steamer, cut carrots into 1/4″ slices.
Steam carrots for 5 minutes.
Combine mustard, honey and olive oil.
Remove carrots from heat and toss with honey mustard mixture.
